TO EAT.

After much testing and investigation, we have decided that nothing can beat the classic Edmonds Cookbook Banana Loaf. 

Bake and ENJOY!!

Ingredients

1 ¾ cups Champion self-raising flour
¼ teaspoon Edmonds baking soda
¼ teaspoon salt
½ cup sugar
2 eggs
¼ cup milk
75g butter, melted
1 cup mashed banana
    Sift flour, baking soda and salt into a bowl. Mix in sugar. In another bowl beat eggs. Stir in milk, butter and banana. Mix quickly into dry ingredients, stirring until ingredients are just combined. Spoon into a greased and lined 22 cm loaf tin. Bake at 180 degrees for 45 to 55 minutes. Keep checking your loaf as every oven is different. Leave in tin for 10 minutes before turning out onto a wire rack.
